1 1/2 cup wheat bran (don’t use oat bran, it’s not as good in these!)

1 cup buttermilk

1/3 cup vegetable or canola oil

1 egg

2/3 cup brown sugar

1/2 teaspoon vanilla

1 cup flour

1 teaspoon baking powder

1 teaspoon. baking soda

1/2 teaspoon salt

Directions:
Directions:
Mix bran, buttermilk, oil, egg, sugar and vanilla. In a separate bowl mix flour, baking soda, baking powder, and salt. Add the liquids and stir until just moistened (don’t over mix). Pour into greased muffin tins and bake at 375 for 15-20 min.
