3 c. whole-wheat flour
1 1/2 c. sugar
1/4 tsp. cloves
1/4 tsp. nutmeg
1 tsp. cinnamon
dash ginger
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 c. pumpkin
1/2 c. oil
2 c. applesauce
1 c. chopped nuts (Optional)
Directions:
Directions:
Combine dry ingredients in a bowl and set aside. In a large bowl, combine the last 5 ingredients and mix well. Add dry ingredients to the wet ingredients and mix just until combined (do not over mix). Fill muffin cups/paper liners about 3/4 full. Top each muffin with a little bit of the Streusel Topping. Bake at 350 º for 15-20 minutes.

Streusel Topping:

1 c. flour
1.c brown sugar
1 c/ butter - soft
1 T. cinnamon

Combine all ingredients in a bowl and cut butter into mixture with a fork or pastry blender (or pulsate in a food processor) just until crumbly.

I substitute egg whites for the eggs and use unsweetened applesauce - taste just as good and is a bit healthier!
