1- 5 lb. Watermelon
3/4 c. Granulated Sugar
2/3 c. Cornstarch
1/4 tsp. Cinnamon
1 tsp. Rose water
1/3 c. Mini Semi-sweet Chocolate Chips

Directions:
Halve or quarter the watermelon. Remove the flesh and cut into chunks, removing and discarding the seeds. Juice the watermelon using a juice machine, or puree the fruit and press it through a fine mesh sieve lined with a double thickness of cheesecloth. Discard the pulp and measure out 4 cups of juice.

In a large saucepan, whisk together the juice, sugar, cornstarch and cinnamon until smooth and no lumps of cornstarch remain. Over medium heat, bring the mixture to a boil and cook, whisking constantly, until thickened and glossy (about 7 minutes). Remove from heat and add the rose water. Let cool until lukewarm, then stir in the mini chocolate chips.

Spritz 6 - 6oz custard cups with water, then spoon the pudding into them. Refrigerate until well chilled and unmold just before serving.
