2 c. Cornbread Crumbs
2 c. Bread Crumbs
1/4 c. Chopped Green Onion
1/4 c. Chopped Celery
2 tbsp. Red Bell Pepper, finely chopped
1/2 c. Low Sodium Chicken Broth
3 Large Eggs, lightly beaten
1 tsp. Poultry Seasoning
1 tsp. Sage
1/2 tsp. Salt
1/4 tsp. Black Pepper

Turkey Salad
2 c. Chopped Turkey (or Chicken)
1 c. Mayonnaise
1/3 c. Dried Cranberries, finely chopped
1/4 c. Pecans, finely chopped
1 tbsp. Fresh Rosemary, chopped
1 tbsp. Fresh Thyme, chopped
1/2 tsp. Black Pepper
1/4 tsp. Salt

Dressing Rounds:
Preheat oven to 350º. Line a 13 x 9 baking sheet with foil. Spray foil with nonstick cooking spray.

In a medium bowl, combine ingredients and mix well. Spoon mixture into prepared pan and pat down to make an even layer.

Bake for 35 minutes. Remove from oven and cool in pan for 5 minutes. Remove from pan. Using a 2-inch round cutter, cut out 2 dozen circles. Return rounds to pan, soft side up, and bake for 15-20 minutes, or until crisp. Remove from oven and cool.

Turkey (or Chicken) Salad:
In a small bowl, combine ingredients and mix well. Top each round with about 1 tablespoon of salad.

Arrange on a platter and serve.
