1 -2 lb sirloin steak cut into thin strips
1/3 cup chopped shallot or onion

Directions:
Directions:
Brown the sirloin in 3 T of butter. Be careful not to burn the butter. add salt and pepper while cooking. Remove and put in a bowl. Add onions or shallots to same pan and cook for a few minutes and remove them and put them in bowl with the meat. Add the remaining 3 T of butter and increase the heat. Add the mushrooms, stir and cook for at least 4-6 minutes. Add the nutmeg and tarragon and lower the flame. Now add the sour cream and stir carefully until smooth. Add the meat and onion mixture and warm being careful not to curdle the mixture.
Serve over the cooked mushrooms ( they take a while to cook and drain so I have the water on to boil before starting the steak)
