1 large onion, sliced thin
1 green pepper, sliced thin
1 red pepper, sliced thin
1 yellow pepper, sliced thin
1 lb. of lean beef top round steak
2 T cornstarch
1 tsp. minced fresh garlic
1 cup water
1 cup of beef broth (I substitute my favorite wine)
1/4 cup of soy sauce

Directions:
Directions:
In a skillet, spray with cooking spray, combine all vegetables and cook, stirring occasionally for about 5 minutes.
Sprinkle sliced beef with the cornstarch, then add to the skillet. Cook until lightl browned. Add ginger and garlic. Stir for 1 minute, until fragrant. Add broth, water and soy sauce. Scrape the bottom to get all the brown bits up. Bring o a boil over medium-high heat. Reduce to mdium-low, cover, and simmer 25 minutes. You can add more water to thing the sauce if you want. Serve over white rice.
