1/4 cup egg substitute
1 cup bread crumbs
1/2 cup Parmesan cheese
2 T parsley
2-3 cloves of fresh, minced garlic
4 boneless, skinless chicken breasts
1 cup tomato sauce
1 cup mozzarella cheese

Directions:
Directions:
Preheat oven 375ºF, coat cookie sheet with cooking spray

Place egg substitute in a bowl, set aside.
Mix bread crumbs, garlic, Parmesan cheese, and parsley in a separate bowl.

Dip the chicken in the egg substitute, then the bread crumb mixture, then place on the cookie sheet.

Bake for 10 minutes, then place 1/4 cup of sauce on the top of each breast, then bake additional 20 minutes, or until cooked through. Then sprinkle with mozzarella cheese and heat until cheese melts.
