Ingredients: Fresh tomatoes (at least 10 – 20) Fresh basil (a good bunch) Garlic (4 - 5 cloves), salt and pepper

Directions:This is the simplest soup. The magic is in the fresh tomatoes and basil, preferably from your garden! Cube tomatoes. Heat up olive oil in a pot. Toss minced garlic into olive oil and add tomatoes. Add salt and pepper to taste and let it cook for at least 30 min on slow. Add some water or chicken stock if the mixture gets too thick. Add fresh basil and let cook for 10 min. Remove from heat and let cool off. Blend the mixture in a blender, heat up and serve. You can top it with some mozzarella or I like Greek yogurt on top of mine. Enjoy! |

Notes: My sister came up with this recipe. Last year we drove from New York to Indianapolis (12 hrs driving). We got home late, had nothing in the fridge, and we were starving. Luckily we did have a bunch of ripe tomatoes and basil in my tiny garden. So my sister put this soup together and since then it’s my favorite.
