2 cups cooked rice drained and aired out for a few hours
1/2 cup green onions sliced pinky width
1/2 cup shredded carrots
4 eggs prepared to scramble, touch of water
4-6 slices of thick bacon, sliced thumb width
1 can sliced bamboo shoots, drained well
1 can sliced water chestnuts, drained well
Soy sauce
Oil

Directions:
Directions:
Cook the bacon until medium - not crispy.
Pour eggs in wok and cook slowly turning once, like a big pancake, remove, let cool, then dice up.
Add a little oil to pan, heat on high, when hot, add rice, stir to fry the rice.
Add the remaining ingredients, stirring after each.
Dribble soy sauce over all, stir.
Turn heat to warm, let it sit 5 minutes.

Variations: Use cooked baby canned shrimp or diced chicken.
