2 tbsp butter
1 cup thinly sliced leeks, white and light green part only [or onion]
1 clove garlic, minced
8 eggs
1/4 tsp salt
pinch of pepper
1 cup diced ham
3/4 cup shredded cheddar cheese
1/4 cup fresh parsley
1/4 cup of water

Directions:

1] In 9 or 10" non-stick skillet [oven proof] melt butter over med. low heat; Cook leeks and garlic, stirring occasionally, until leeks are softened and golden [ about 6 min.]
2] In bowl whisk eggs together with 1/4 cop of water,salt and pepper; pour over leeks and sprinkle with ham, cheese and parsley; Cook over med. low heat until bottom and sides are firm but top is still runny, [about 7 min.]
3] Then place in oven and broil until frittata is golden and set [about 2min.]
