2 medium size Tomatoes, chopped
2/3 c. Fresh Cilantro, chopped
1/2 c. Green Onion, chopped
1 small can Shoepeg (small white corn), drained
1 small can Blackeyed Peas, drained
1/4 c. Olive Oil
2 Garlic Cloves, chopped or crushed
1/4 c. Red Wine Vinegar
1 tsp. Cumin
3/4 tsp. Salt
1/8 tsp. Black Pepper
1-2 Avacadoes, cut into small pieces
Tortilla Chips

Directions:
Directions:
In a bowl, mix together tomatoes, cilantro, green onion, corn and blackened peas.

In a separate bowl mix together olive oil, red wine vinegar, garlic, cumin, salt & pepper. Add to vegetables and mix.

Transfer to a serving bowl. Just before serving, add avacadoes and serve with Tortilla chips.
