3C - Cooked Shredded Chicken (rotisserie is great)
1/4 to 1/2 C - Cookie's Brand Buffalo Wing Sauce
3.5 oz - Cream Cheese, softened
1 3/4 C - Cheddar Cheese, shredded
1/4 C - Green Onions, sliced
2 C - Flour
8 Eggs, beaten
6-8 C - Cornflakes, crushed

Preheat the oven to 350º. Line baking sheet with parchment paper.

Mix chicken, cream cheese, and hot sauce until combined. Stir in cheddar cheese and green onions. Form into 1.5" balls.

In separate bowls, set out flour, eggs, and cornflakes (in that order). Season the flour and corn flakes with salt, pepper, garlic powder, and a little onion powder.

Roll each chicken bite in flour, shaking off excess. Next roll in egg wash, followed by Cornflakes. REPEAT -- "Double Dipping" is essential!!

Place on parchment paper lined cookie sheet. Note, I put a wire cooling rack on the cookie sheet and put the chicken bites on that to bake...makes them crispy all the way around. Bake for 20-25 minutes.

Serve warm with ranch or bleu cheese along with carrot and celery sticks.

Freezes well! To freeze, prepare through double dipping. Place on parchment lined baking sheet and freeze for 15-20 minutes. Transfer to a freezer bag. To bake, place the frozen bites on a baking sheet and bake at 350 for 25-30 minutes.
