1 lb. loose Italian Sausage
2/3 c. Italian Seasoned Bread Crumbs
1 Egg
1 tbsp. Olive Oil
1 tbsp. Fresh Parsley
1 Carrot, slivered
1/2 Onion, chopped
4 or 5 cans Chicken Broth
1 Garlic Clove, minced
Red Pepper Flakes
Kale
Mini Cheese Tortellini
Parmesan Cheese


Directions:
Directions:
In a bowl, mix together sausage, bread crumbs, egg, oil and parsley. Roll into walnut size balls and brown in a frying pan. Do not cook all the way through. Remove and set aside.

Par-boil Kale.

Par-boil mini cheese tortellini.

Saute carrot and onion for 2 minutes, then add minced garlic, parsley and red pepper flakes. Add chicken broth and 3 cups of water. Bring to a boil. Add kale and tortellini.

Serve in soup bowls with a dribble of olive oil and parmesan cheese. Enjoy with crusted grilled Italian bread.
