2 poblano peppers
1 jalapeno pepper
2 red peppers
1 habenaro pepper
1 medium onion
3 ears corn, kernels removed
1 can black beans
1 can kidney beans
2 C fire roasted tomatoes
4 chicken breasts, skin off, bone in
2 limes
1 bunch cilantro
pinch of salt
pinch of pepper
1 tbs olive oil
3 tbs cumin
4 tbs chili powder
2 tsp coriander
1 tbs grill seasoning
6-8 C Water
6 cloves garlic

Directions:
On a gas stove or grill roast all peppers except habenaro. Place in a glass bowl, and place plastic wrap over. Once the skins are lose, remove skin. Place the skins into large soup pot. Chop peppers, set aside. Add stems and seeds into soup pot.
Add habenero to soup pot, along with the stems of the cilantro, grill seasoning, and zest of limes.
Add chicken and 6-8 C water.

In a medium soup pot, sautee onion, add garlic. Once onions and garlic are soft, add chopped peppers, tomatoes, corn, beans, along with all spices, except grill seasoning. Simmer until broth is done.
Poach chicken in broth for 15-20 minutes. Remove chicken, allow to cool. Pull chicken off bone, reserve for later use. Return bones to the broth. Simmer broth for 3-4 hours. Strain the broth.
Combine the tomato mixture to the broth, add chicken 15 minutes before serving. Top with cilantro and a squirt of lime.
