Beer-Brine Pork Chops Recipe

Ingredients: 4 Thick Pork Chops (about 1.5 inches thick) 1 3/4 Cups Water 1 3/4 cups stout (dark beer like Guinness) 3 tbls coarse salt 2 tbls molasses 2 tsp cracked black pepper 4 cloves of garlic, minced

Directions:1. Trim the fat from the chops. Place the chops in a resealable plastic bag in a shallow dish. For the Brine - combine the water, stout, salt and molasses. Stir until the salt dissolves fully. Pour the brine over the chops, seal the bag and marinate in the refrigerator for 8 to 24 hours. Make sure to turn the bag occasionally.
2. Drain the chops then discard the brine. Pat dry the chops with a paper towel. In a small bowl combine the pepper and the garlic. cover the chops with the pepper/garlic mixture. Be sure to rub the mixture into the meat. (That's why they call it a rub :P).
3. For a charcoal grill place a drip pan in the center of the grill. Arrange coals around the drip pan and maker sure the coals are medium-hot. Place the chops on the grill above the drip pan. Cover and grill for 30-35 minutes, or until the chops are slightly pink in the center and the juices run clear (160 degrees F) turning chops once about halfway through the grilling process.
For a gas grill preheat the grill to medium heat. Adjust for indirect cooking. Cover the grill as above. |
