1/2 cup shortening
1 cup sugar
2 cup flour
1 teaspoon soda
1 teaspoon salt
2 eggs
3 bananas, mashed
1 cup pecans, chopped

Directions:
Directions:
Cream shortening. Add sugar. Add unbeaten eggs, one at a time. In another bowl, sift flour with soda and salt. Add chopped pecans in dry mixture. Stir into banana mixture until all ingredients are just moistened.
Bake 1 hour @ 325º in loaf pan that has been sprayed with nonstick cooking spray. Cool for a bit before wrapping.

My mother would always make this recipe for us whenever there were bananas getting too ripe. She also gave many loaves away. I remember buttering and toasting mine for a quick breakfast or snack. Good eating!
