2 large sweet potatoes - scrubbed & rubbed lightly with olive oil
1 small baking potato - scrubbed & rubbed lightly with olive oil
5 Tbsp. pure maple syrup
1/2 tsp. salt (more to taste)
1/2 tsp. cayenne powder
1 Tbsp. pure chili powder
4 Tbsp. unsalted butter - room temperature*

Preheat oven to 375º.
Bake potatoes on middle rack for approx. 45 minutes - bake until tender.
Let cool enough to remove peels and place potatoes in food processor. Add the maple syrup, salt, cayenne, and chili powder and process for 1 minute while adding the butter 1 Tbsp. at a time. Place in buttered casserole and keep warm in oven until ready to serve (microwave just before serving works well too).
*adjust cayenne to taste: start at 1/4 tsp. but do not eliminate. Can also stir in more butter before serving.
