2 T butter
3 T vegetable oil
3 1/2 C zucchini, coarsely grated
1/4 C flour
2 eggs, beaten
salt & pepper
Directions:
Directions:
Grate zucchini, wrap in dish cloth and squeeze all liquid out. Mix zucchini with the flour, eggs, salt & pepper. In lg skillet melt butter with oil and drop batter from spoon, cook 4 minutes on each side.
