4 cups unbleached flour - sifted
1/4 cup sugar
1 tsp. salt
1 tsp. baking powder
2 Tbsp. caraway seeds
1/4 cup chilled butter, cut into small cubes
2 cups raisins

1/13 cup buttermilk
1 egg unbeaten
1tsp. baking soda

1 egg yolk or a little cream for brushing on loaf before baking

Directions:
Directions:
Preheat oven 425º - when ready to put loaf in oven reduce temp. to 350º.
Grease and flour a large cast iron skillet or a 2 qt. round casserole.
In a large mixing bowl, put sifted flour, sugar, salt, baking powder; and stir in caraway seeds. With pastry blender (or 2 knives scissor fashion, cut in butter till mix is like a course corn meal; stir in raisins.
In separate bowl mix buttermilk egg, soda; stir into flour mixture until just moistened. Turn dough onto lightly floured surface; knead lightly until dough is smooth and shape into a ball. Place in casserole. (if using cast iron pan, shape into a flattish round ball).
With a sharp knife, make a 4" cross, 1/4 " deep, in center of your loaf. Brush with beaten egg yolk (or cream).
Bake bread approx. 1 hour + 20 minutes, or until cake tester, inserted in center, comes out clean (can use very sharp smooth thin knife to check). Cool bread in baking dish 10 minutes., then turn loaf out on rack to finish cooling. When completely cool, wrap tightly in foil if not serving right away...dries out easily.
