12 oz. box of Jumbo Pasta Shells
1-1/4 C. Mozzarella Cheese, shredded (reserve 1/4 C.)
1 C. Parmesan Cheese, grated
16 oz. Ricotta Cheese
4 large Eggs, lightly beaten
1 tsp. Black Pepper
1 tsp. Garlic Powder
1 Tbsp. Dried Parsley
2 C. Spaghetti Sauce

In an 8 qt. pot, bring salted water to a boil and cook shells for 8 minutes or until al dente. Drain and cool immediately with cold water.
Drain and place open side down on paper towels.
In a medium bowl, combine the rest of the ingredients, except the spaghetti sauce (reserve 1/4 C. of the mozzarella cheese).
Place a thin layer of spaghetti sauce in the bottom of a 9 x 13 x 2 inch baking dish. Preheat oven to 375º.
Spoon the cheese mixture into each pasta shell and place open side up, in a single layer in the baking dish.
Pour the rest of the spaghetti sauce over the stuffed shells.
Loosely cover with tin foil and bake for 35 minutes. Remove tin foil and sprinkle reserved Mozzarella cheese on top. Return to oven and bake an additional 5 minutes.
