1 1/4 c. flour
1/2 c. "safe" whole-wheat flour
1/4 c. "safe" wheat germ
1 c. sugar
1/4 tsp. salt
2 tsp. baking soda
4 mashed ripe bananas
1/2 c. vegetable oil
2 T. orange juice
3/4 tsp. grated orange peel
optional additions: dairy-free, nut-free chocolate chips, egg-free mini marshmallows

Directions:

Preheat oven to 350º. Grease a loaf pan.
Whisk together flour, whole-wheat flour, wheat germ, sugar, salt and baking soda. Set aside.
In a large bowl, combine mashed bananas, oil, orange juice, and orange peel.
Add dry ingredients to wet ingredients and stir till blended.
Pour batter into prepared pan.
Bake 50 to 55 minutes, or until tester comes out clean.
Remove from oven and cool for at least 15 minutes on a wire rack.
