1 cabbage, shredded
1 sweet onion, thinly sliced
1 bell pepper, thinly sliced

1 cup vinegar
1 tsp. salt
2 Tbsp. dijon mustard
1 Tbsp. sugar
1 1/2 tsp. celery seed
1 cup salad oil (I use combo of olive oil and/or safflower and/or canola)
3/4 cup sugar

Directions:
Directions:
Shred and slice veggies and set aside in large bowl.

Combine & bring to a boil the vinegar, salt, mustard, sugar and celery seed. Then add the salad oil and sugar allowing sugar to dissolve. Pour over veggies and see that all pieces are coated.

Let rest in refrigerator for 24 hours. Stir and serve nice and cold.

This recipe is from the Cemetery Association Meeting at Scottsville, TX where families would gather to care for family graves, etc. A reunion of sorts. This is the best cole slaw recipe I have ever had.
