* 8 slices French bread, 3/4" thick (or regular bread)
* 1/2 cup heavy cream
* 1/2 cup milk
* 6 ripe, firm bananas (sliced length-wise and then in thirds)
* 2 tbsp. dark rum
* Vanilla ice cream
* 1/2 cup sliced almonds, toasted
* 2 eggs, beaten
* 1/4 cup sugar
* 1 1/4 sticks butter
* 1/2 cup brown sugar
* 2 tsp. cinnamon
* 2 tbsp. vanilla extract
* Whipped Cream

FRENCH TOAST:

(1) In a large bowl, combine eggs, milk, cream, 1/4 cup sugar, 1 tbsp. vanilla and 1 tsp. cinnamon.

(2) In a skillet or griddle, melt 1/2 - 1 tbsp. butter over medium high heat. When the butter is hot, coat bread (just the amount that will fit in the pan or griddle) in the egg mixture and remove, letting the excess mixture drip off.

(3) Cook the first side until golden brown. Add butter to griddle and flip to cook the second side. Repeat until all slices are cooked. Set aside and keep warm.

SAUCE:

(1) Melt 1 stick butter in a large skillet.

(2) Add brown sugar and bring to a boil. Remove from heat and stir in 1 tbsp. vanilla, 1 tsp. cinnamon, rum and bananas.

(3) Return to heat and simmer on medium low heat 1 to 2 minutes, until sauce thickens.

(4) For each serving, place a scoop of ice cream on top of one slice of French toast and spoon he bananas & sauce over the ice cream.

(5) Top with whipped cream and sliced almonds.
