1 box of shredded filo (knafeh)
1 1/2 lb of curd cheese cut to slices
1 lb Ricotta cheese
1 cup of clarified melted butter (check the book
for butter recipes) or 1 cup of ghee
1 dash of cinnamon
1/4 cup ground pistachio to decorate
and syrup ( check the book for recipe )

Directions:
Place the knafeh in a baking pan 10x14, add the melted butter to the knafee, mix all the knafeh in the butter evenly. Divide the knafeh in half. Take one half of the knafeh and spread evenly in the bottom of the baking pan covering the bottom.
Place all the sliced cheese evenly on the knafeh and press gently. Add the Ricotta on top and spread it on top the curd cheese with a dash of the cinnamon, then add the rest of the knafeh to cover all the cheeses. Press down on it gently.
In a preheated oven on 425º, bake the knafeh on the lower wire rack in the oven for 20 minutes or until golden on the bottom, then transfer to the top to get a golden color on the top of the knafeh . Let it cool for 5 minutes then add the syrup all over the top, be generous. Then cut into square pieces. Garnish ground pistachio on top of the knafeh when you serve if you like.

Some people use just canola Oil.
