10 Medium Potatoes, peeled & sliced
1/2 Red onion, diced
1 qt Half and Half
1 stick of butter
2 Tbsp dried parsley
Salt & pepper to taste

Directions:
Directions:
In 8 qt pan cover sliced potatoes with water. Boil until soft, not too mushy. Do not drain water, use potato masher to break up potatoes to size of your liking. Add butter until melted, then Half and Half. Keep heated but do not bring to a boil again. Add parsley and salt and pepper to taste. Enjoy!!
