1/2 cup water
1 lb. Ground Beef
1 Small Onion (Chopped)
1 tbs. Chili Powder
1/2 tbs. Comino Powder
1/2 tbs. Salt
1/4 tbs. Pepper
1 lb. Medium Cheddar Cheese
12 - 8 Inch Flour Tortillas
1 - 19 oz. Can of Enchilada Sauce

In a fry pan, add 1/2 cup of water and bring to a boil. Add ground beef and chopped onions. Cook until well done and broken into loose pieces.
mix in chili powder, comino powder, salt and pepper. Set aside to cool.

PREPARING TO MAKE ENCHILADAS
Pour enchilada sauce into a shallow dish or pan and cut the cheese into 12 long slices. Make 12-10 x 10 pieces of aluminum foil and stack them. Set the meat mixture in the work area and get a large plate.

MAKING THE ENCHILADAS
Dip a tortilla into the enchilada sauce coating both sides. Lay the tortilla on the large place. Put one piece of cheese in the middle of the tortilla, one large scoop of the meat mixture. Fold one side of the tortilla over the meat mixture and then fold the other side over the top. Pick the folded tortilla up and place it on the aluminum foil with the folded sides down. Bring the top and bottom sides of the aluminum foil together and seal them by folding them together. Fold the left and right side of the aluminum foil together and seal them.

COOKING THE ENCHILADAS
Preheat oven to 350º. Lay the enchiladas on a cooking sheet and cook for 30 minutes.

Add your favorite topping: Sour cream, Hot sauce, Guacamole, Salsa, etc.

Enchiladas are easy to make and a yummy alternative to what we normally eat. You can make up a batch using this recipe and throw them in the freezer. When you are ready for a little Mexican treat, take them out of the freezer, pop them in the oven at 350 degrees for 1/2 an hour ... or run a little hot water on the outside, take them out of the aluminum foil and cook them in the microwave for a couple minutes until they are bubbly and hot.
