1 28 oz. can of Rienzi tomato puree
1/2 cup baby carrots
3 cloves garlic, minced
1 medium onion, chopped finely
1/4 c. olive oil
1 c. chopped fresh basil
1 c. chopped fresh parsley
salt and pepper to taste
Optional: add 1 can of diced tomatoes (drained)

In a medium saucepan, coat the bottom with olive oil and heat over medium high heat. Add onions and garlic and cook until onions are clear or starting to brown. Meanwhile, finely chop the carrots in a food processor; as finely as you can. When onions and garlic are mostly cooked, add the tomato puree, carrots, basil, and parsley. Bring sauce to a boil, then reduce heat to low and cover. Cook on low for 2 hours or until carrot pieces are soft. Add salt and pepper if desired.

Got this recipe from my college roommate's mom, who is fresh off the boat Italian. Her recipes are "add a little of this and a little of that", so if it doesn't taste quite right, add a little more of this or that.
