2 Cornish game hens
1 box Jiffy corn muffin mix
1 tbls. rosemary
2 tbls. olive oil
2 tsp. granulated garlic or 1 clove fresh garlic, minced
2 tbls. melted butter
1/4 c. craisins
salt and pepper

Directions:
Directions:
Bake corn muffins according to package directions. Remove from oven and allow to cool for 15-20 mins. Preheat oven for hens to 400º F. When muffins have cooled a bit, crumble them into a medium sized bowl. Mix in melted butter, half the garlic, half the rosemary, and the craisins. Add more butter if you prefer moist stuffing. Use stuffing to fill hens, set aside any leftover dressing for heating later. Set hens in a baking dish and cover with olive oil and remaining rosemary and garlic. Add salt and pepper if desired. Baked at 400º F for 1 hour or until hens reach 175º. Serve with a veggie on the side!
