1 1/2 lbs. lean beef (boneless)
1/2 lb. lean pork (boneless)
3 cups meal
2 cups water
blk. pepper, hot sauce, chili powder, garlic powder, red pepper & salt

Directions:
This recipe calls for a grinder for the meats, but I think Sassy used a food processor once they became available.
Cook beef and pork until tender, drain, saving the broth. When cooled, grind, set aside.
Bring broth to a boil and add pepper, hot sauce, chili, garlic, red pepper & salt. While this is boiling, mix 3 cups meal with 2 cups water. Add to broth & cook until quite thick while stirring rapidly.
Once thick, spread this mixture,in a rectangle, on a wet towel. , put ground meat down center and fold into a roll. I believe this is enough for 2 rolls. They can be frozen. When ready to cook, steam over water 1 1/2 hours before serving.

This was a tradition for Christmas Eve, at Sassy's. While going through her recipes, I found a little red envelope with a card inside. It was sent to the Rowe Family by Mrs. Sam Smith, Sr. It was attached to her Tamale Roll she had sent for Christmas. Now I know where this tradition started and how to make it.
