Ingredients: 1 c. long-grain white rice, or Basmati 1 fryer chicken (3-4 lbs.) cut serving pieces or breasts or legs or thighs 2 1/4 c. hot low salt chicken broth
Sauce: 1/2 c. plain nonfat yogurt, or 1/4 c. soy milk 1/4 c. honey 2 Tbsp. Dijon mustard 1 Tbsp. soy sauce 2 tsp. fresh grated ginger Pinch salt Freshly ground black pepper to taste

Directions:1. Preheat oven 350º 2. Assemble rice in oiled 9 x 13 baking dish or heavy au gratin dish. Arrange chicken on top, pour hot broth over all. Cover tightly with aluminum foil and bake 45 minutes. 3. Make sauce by combining remaining ingredients. Uncover baking dish and spread yogurt mixture on chicken. Bake uncovered, until rice is tender and chicken is cooked through, about 15 minutes longer. If still dry, add a little chicken broth. Copyright © Zona Spray 2005 |

Notes: This is one of those old recipes that always pleases: easy enough for family yet good enough for company. While the oven is on, roast broccoli, asparagus or carrots along with the chicken. Remember, roasted vegetables can be cooked ahead, removed before quite finished, and reheated until tender when it's just about serving time. Always toss vegetables in olive oil before roasting; sprinkle with salt, pepper and fresh herbs before serving.
