1 green bell pepper, chopped
3 medium potatoes, chopped
3 celery stalks, chopped
3 large carrots, peeled and chopped
1 ½ - 2 lb. stew meat, trimmed
1 bay leaf
1 pkg. onion soup mix
1 can cream of mushroom soup
1 can chicken broth
1 can Ro-Tel tomatoes with green chilies

Brown meat in oil in skillet. Place with all other ingredients in crock pot. Cook 8 hours on low.

I have also made this with leftover roast after I have made pot roast. In that case, I add the chopped roast beef just to heat before serving. I also like to add other vegetables – peas, corn, green beans during the last hour. Remove bay leaf before serving.
