1 7lb Roaster Chicken
1 Orange
1 Onion
1 tsp rosemary
1 tsp thyme
1/2 cup white wine

Glaze:
3T Butter
3T Honey
3T Dijon Mustard
1T Apricot Jam
3T Orange liquor (Gran Marnier or Triple Sec)

Chicken:

Rinse and pat dry chicken,
Cut orange and squeeze juice over the chicken and into the inside cavity. Stuff the chicken with the orange rind and the onion cut into quarters. Salt and pepper inside and out. Tie the chicken legs together with string. Rub the outside with rosemary and thyme.

Glaze:
Combine all glaze ingredients except orange liquor in a sauce pan until melted. Add liquor and stir until well mixed.

Preperation:

Place the chicken in a roasting pan and pour the wine over the chicken.

Preheat oven to 400º and bake for 35 to 40 minutes

Remove chicken from oven, and reduce oven temperature to 350.

Apply glaze, and return chicken to the oven.
Bake for one hour basting with the glaze every 15 minutes.
