2 Tbsp olive oil
1 red onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 cups black eyed peas, frozen or canned
4 scallions, minced
1 jalapeņo pepper, cored, seeded and minced
1 Tbsp fresh thyme
1/4 cup cilantro leaves

3 cups cooked rice

Directions:
Directions:
Heat oil in large skillet over medium heat. Add onion, garlic, red bell pepper, jalapeņo pepper and scallions and saute until onions are translucent and vegetable tender.

Add black eyed peas, parsley, and thyme, stir to mix. Cook until warmed through if using canned peas, and slightly longer until softened if using frozen peas.

Serve with cooked rice.
