2 cup za'atar (can be bought in stores)
1 cup olive oil
1 1/2 cup dried oregano (crushed)
1/3 cup sesame seed
2 tsp sumac
1 1/2 tsp salt
1/4 tsp black pepper
10 pc gyro bread
Mozzarella cheese (optional)

(Homemade Za'atar can be made with the above ingredients)

In a bowl mix all the ingredients well

Place 2-3 tbsp of the Za'atar mixture on the bread and spread out evenly. Add a slice of cheese on the top if you want.

Line the oven racks with foil and place the Gyro bread directly on the racks and bake in oven at 450 degrees for 5-10 minutes or until the crust is a golden brown.

Cut in to wedges like a pizza and serve. These can be served hot, warm or cold.

Note: if you do not want to line your over racks with foil you can use baking sheets to place the Gyro bread on to bake.
