2 T olive oil
1 clove garlic
6 chick breasts
1 chorizo or Spanish sausage
3 tomatoes
1 onion, chopped
1 red pepper, chopped
1 tsp paprika
3 c chicken stock
fresh lemon wedges
1 c tomato sauce
2 c rice (uncooked)
1 lb raw shrimp, peeled
1 c green frozen peas
12 large Spanish olives
12 scallops
2 T chopped pimento
1 1.2 tsp saffron
Fresh parsley
Salt and pepper to taste

Heat olive oil in large skillet, cook garlic and set aside. Brown chicken and chopped chorizo; drain fate
Add tomatoes,onion,pepper,paprika,salt and pepper. Cook for 10 min. Add chicken stock and tomato sauce; bring to boil. Add rice and saffron. Reduce heat and simmer for 15-20 min; uncover. Add shrimp,peas,olives,scallops,pimentos and reserved garlic.
Place lemon slices around edges of pan for garnish; sprinkle with parsley
Yields 8 servings
