1 1/2 c water
1 tsp anise seed
1 c honey
1 1/4 c sugar
3 tsp soda
4 1/4 c sifted flour
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
3 tbsp chopped citron
3 tbsp chopped candied orange peel

Directions:
Directions:
Bring water and anise seed to boil.

Add honey and sugar to water and stir until dissolved. Add soda. Turn off heat.

Sift together flour, salt and spices. Add citron and orange peel, and mix with spoon.

Add honey mixture to dry ingredients and stir until smooth.

Turn mixture into two buttered and floured 8 1/2 x 4 1/2 x 2 3/4 loaf pans and bake about one hour at 350º

The dough is heavy, so if you have a stand mixer, use it. When ready to enjoy, slice thinly and serve with quince jelly or a soft cheese, or both!
