1 lb very fresh lean beef or lamb meat (ground twice using food processor)
3/4 cup cracked wheat (No.1 fine bulgar)
1 small onion chopped
1/2 cup roasted red peppers (diced) or red pepper paste
1 1/2 tsp cumin
1 1/4 tsp salt or to taste.
1/4 tsp cayenne pepper (optional)
1/4 tsp all-spice.
1/2 cup ice water as needed.
2 stalks of scallions (chopped)
olive oil and mint leaves for garnish.

In a bowl add the bulgar wheat and wash it with water. Drain and let it sit for 10 min. In a food processor add bulgar, salt, all-spice, cumin, onion, and roasted peppers. Blend to combine. Then add the meat and some ice water and keep grinding until everything is combined and soft. To serve: place all the kibbeh meat in a serving platter, make it smooth by dipping your hands in cold water to spread the kibbeh. Use a fork to decorate the top. Add oil and sliced onion on the side or scallions. Serve with pita bread.
