6 squares baker's semi-sweet chocolate [divided], 3/4 cup plus 1 tbsp. butter, softened, [divided], 1 egg, 2 cups graham cracker crumbs, 1 cup flaked coconut, 1/2 cup chopped walnuts, 2 tbsp. Bird custard powder, 3 tbsp. icing sugar, 1 tsp. peppermint extract, if desired.

1] Heat oven to 350ºF 2] Microwave 2 chocolate squares and 1/2 cup of butter in large microwaveable bowl on med. heat 2 min. or until butter is melted. Stir until chocolate is completely melted. Blend in egg. Stir in graham crumbs, coconut and nuts. Press onto bottom of 9" square pan. Bake for 8 min.; cool completely. Next 3] Beat 1/4 cup of the remaining butter, custard powder, milk,sugar, extract, and food colouring with mixer until well blended; spread onto crust Refrigrate 15 min.
4] Microwave remaining chocolate squares and butter in microwave bowl on med 2-3 min. or until butter is melted. Stir until chocolate is completely melted. Spread over custard layer
5] Refrigerate 3 hour before cutting into bars
