1-1/4 cup flour, 1 tsp salt, 1-1/4 cup beer, 1 egg yolk, 1 tbsp. oil, 4 baking potatoes, peeled, cut 1/2" thick slices and soaked in cold water, oil for deep frying, 1-1/2 to 2 lb. firm white fish, salt & pepper to taste, 1 egg white, beaten until stiff peaks forms, 1 cup flour.

Mix 1-1/4 cup flour and 1 tsp salt into large bowl. Make well in the center and add beer, egg yolk and tbsp. of oil. Beat well an whisk until smooth, and set aside to rest for 30 min.: Preheat oven to 200ºF and heat oil in fryer to 365-375ºF. Drain potatoes and pet dry. Add potatoes to hot oil in batch, dropping in one at a time to keep them from sticking together.Fry until golden brown, drain place on paper toweled pan, put in oven to keep warm: Season fish with salt & pepper. Gently fold egg the whipped egg whites into prepared batter with spatula. Place the cup of flour into large bowl, Dip the fillets into the flour, coating them on all sides, shake off the extra. Set aside on platter: Working in batches, dip the floured fish fillets into batter and gently put into hot oil. fry until brown on all side. Remove and keep warm until the rest are done.

Serve the fish and chips with malt vinegar tartar sauce and a sprinkling of salt.
Cod,sole&hake are most commonly used. But any firm white fish will do.
