1 c. Peanut butter, creamy or crunchy
1 c. sugar
1 egg
1 tsp. vanilla extract

Directions:
Directions:
Preheat oven to 350ºF.
In a mixing bowl, combine peanut butter, 1 cup of sugar, egg and vanilla. Stir well. Roll the dough into balls the size of walnuts. Place on a prepared baking sheet. With a fork, dipped in sugar to prevent sticking, press a crisscross design on each cookie.
Bake 12 minutes, remove from the oven and sprinkle with some sugar. Cool slightly before moving from the pan.
