Pecan Praline Cheesecake Recipe

2 c coarsely ground pecans
¼ c Honey
¼ cup butter
Filling:
2 ½ 8-oz pkg cream cheese
¾ c sugar
1 to 2 t vanilla
3 eggs
1 egg yolk
2 T whipping cream

Mix butter and honey in a glass pie pan. Place in microwave to melt butter and slightly heat. Remove from microwave and add pecans. Mix and distribute and press mixture evenly on bottom of the glass pan.
Filling:
In medium sized bowl, beat cream cheese until fluffy. Add sugar and vanilla until well blended. Add eggs, one at a time, then egg yolk, stirring well after each addition. Stir in cream. Pour this mixture over the pecan mixture. Bake at 450 degrees for 10 minutes only. Reduce heat to 200 degrees and continue baking for 1 hour or longer until filling is firm and lightly brown. Remove from oven and allow cake to cool.

Once cool, use knife to loosen sides of cheesecake. The pecan mixture can be your crust or you can flip the cheesecake after cooking and it will be your praline topping.
