3 oz cake flour. 1 oz cornstarch. 1 oz cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 oz salt. 2 1/2 oz egg whites. 6 oz date puree. 1/2 pint apple juice concentrate. 2/3 vanilla extract. 1/2 oz 10X sugar. (Powder sugar) 12 oz raspberry sauce.

Preheat oven to 350º. Sift together dry ingredients (minus sugar). Beat the egg whites with the date puree, juice and vanilla. Add dry ingredients to the wet and mix well. Coat a 9 inch cake pan with cooking spray and bake cake for about 30-35 minutes. Cook on a rack. Cut cake into 2 layers. Spread raspberry sauce over bottom layer and cover with top layer of cake. Cut into 8 slices. Garnish each slice with a ribbon of raspberry sauce and dust with powdered sugar.
