"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 c butter, room temperature
1/3 c + a little extra sugar
pinch of salt
1 2/3 c flour sifted
2/3 c chopped walnuts
1 tsp vanilla

Directions:
Directions:
Cream butter. Add sugar and beat until fluffy. Add vanilla and beat until well incorporated. Add flour and salt and mix well with spoon. Add nuts and mix until well distributed. Using a spatula, position the dough in a line about 12 inches long on a piece of waxed paper. Roll dough into a log shape, making sure to eliminate any air pockets. Chill wrapped dough in the refrigerator at least 3 hours. Remove dough from refrigerator and let stand 10-15 minutes (dough should be easy to cut, but not soft). Cut 1/3 inch slices and bake at 350º about 10 minutes on ungreased sheets. Remove from oven when set but before cookies begin to brown on tops.

Personal Notes:
These cookies are fragile but yummy. There really are no eggs in this recipe.
