2 c sugar
4 eggs
1 tsp vanilla
1 tsp salt
1 cup vegetable oil
1 1/2 c finely diced cooked carrots
2 c unsifted flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp all spice
8 1/4 oz crushed pineapple, well drained
1 c chopped nuts
1 c raisins

Directions:
Directions:
Beat together sugar, eggs, vanilla and salt. Add vegetable oil and beat well. Add carrots and mix well. Combine flour and spices, add to wet ingredients and beat 4 minutes. Add pineapple, nuts, and raisins and stir until well distributed. Pour into a buttered and floured 9 x 13 pan. Bake at 375º for 30 minutes, then turn down oven to 350º and bake another 30 minutes. Test with toothpick.

Spices can be adjusted to your liking. This moist cake doesn't really need frosting, but you could do slightly sweetened whipped cream to dress it up.
