Cabbage Rolls (Gotabki) Recipe

I large head of cabbage
2 tbsp. vinegar
1 tsp. salt
1 onion chopped fine
3 tbsp. butter
1 lb. ground beef
1/2 lb. ground pork or Italian sausage (my preference)
1 egg
1/2 cup partially cooked rice
1/4 tsp. poultry seasoning
1-2 cans of V-8 juice
salt and pepper to taste

Directions:
Wilt cabbage leaves by scalding in boiling water to which the vinegar and salt have been added.
Drain, cool in cold water and pat dry.
Cut out heavy ribs from the cabbage leaves.
Saute onion in butter until transparent.
Combine meat, egg, rice, onion, and seasoning and mix well.
Spread each leaf with about two tablespoons of the mixture.
Fold the two opposite sides of the leaf and roll up.
Place in large flat bottomed pan.
When you have them all rolled and in the pan, add butter and V-8 juice.
Simmer slowly for 2 hours.
