1 cup coarsely chopped zucchini
½ cup coarsely chopped onion
2 garlic cloves pressed
1 pound sweet or hot Italian turkey sausage
1 26 oz. jar spaghetti sauce
2 14.5 oz. cans beef broth
1 cup water
1.5 cups uncooked pasta nuggets/elbows or small pasta of your choice
2 tbsp. snipped basil (or 1.5 tsp. dried basil)

Remove casings from sausage and discard them OR squeeze sausage out of casings right into large pan/pot. Brown sausage in a pan with onion and garlic. Cook for 8-10 minutes or until no longer pink, breaking sausage into crumbles, then drain (or use paper towels to absorb grease.)
Add spaghetti sauce, broth, and water. Bring to boil. Stir in pasta. Reduce heat to simmer, uncovered for 7 min. Stir zucchini into chili, then cook 5 minutes or until zucchini is tender. Remove from heat; stir basil into soup, if desired.
*Recipe yields about 6 servings or 8 cups.

This is hearty, healthy, family favorite recipe that is my go-to when I want to bring a meal to someone. Who doesn't love one-dish meals? It freezes well, too.
If you cook the sausage in a large soup or chili pot, then you can continue with the recipe in the same pot, saving on dishes to wash. FYI, I always double the recipe and can barely fit it all into a 7 qt. shallow chili pot.
I pour my measured water into the empty spaghetti sauce jar and shake it to get the rest of the sauce out before adding water to pot.
You can also add more seasonings or even Tabasco if you like.
