2 Tbsp unsalted butter
1/2 lb bay scallops, rinsed and cut in half
1 tsp finely minced lemon zest
1-2 cloves garlic, minced
2 Tbsp fresh dill, minced
1 cup Gruyere cheese, finely grated
1 cup mayonnaise
freshly ground black pepper
36 1 inch bread rounds, lightly toasted
Good quality paprika

Directions:
Directions:
Melt butter in a saute pan over medium high heat. Add scallops, lemon zest and garlic and saute 2-3 minutes. Add dill and remove from heat and cool.

Combine the mayonnaise, cheese and pepper. Stir in scallops (leaving excess liquid in pan) and gently mix.

Refrigerate until ready to use.

Preheat oven to 425º.

Place toast rounds on a sheet pan and top with a teaspoon of the scallop mixture. Sprinkle with paprika.

Bake until puffed and golden ( 5-10 minutes).

Serve hot.
