1/2 t. grated lemon rind
2 T. fresh lemon juice
1 T. olive oil
1 T. honey
1/4 t. salt
1/4 t. pepper
4 1/2 c. seeded chopped tomatoes, a mix of red and yellow, cherry and regular sizes, if available
2 t. chopped fresh parsley
3/4 c. chopped red onion (optional)
1 lemon thinly sliced (optional)

Directions:
Directions:
1. Combine first 6 ingredients in a medium bowl.
2. Add tomato and parsley (and red onion if using); toss gently to coat.
3. Marinade 15 minutes, up to 30 minutes. Garnish with lemon slices, if desired. Makes 4 1/2 cups.
