3 (16 oz.) cans black-eyed peas, drained & rinsed
1/2 c. chopped purple onion
1/3 c. chopped fresh parsley (I use cilantro)
1/4 c. white vinegar
1/4 c. red wine vinegar
1/4 c. sugar
1/4 c. vegetable oil
3/4 tsp. chili powder
chopped, seeded fresh jalapeno chiles to taste

Combine all in a bowl, mix well. Cover and marinate in the refrigerator for 4 - 6 hours, stirring occasionally. Serve with tortilla chips.
