2 cups flour
2 cups sugar
2 tsp baking powder
1 tsp salt
1 ½ tsp baking soda
1 tsp cinnamon

1 ½ cup veg oil
4 eggs
2 cups finely grated carrots
½ cup nuts
1 small can crushed pineapple

Icing
1 box powdered sugar
1 stick butter or margarine
1 package 8 oz cream cheese
1 tsp vanilla
Cream together with mixer until smooth

Mix together the flour/sugar mixture. Combine with the remaining ingredients. Pour into 3 large layer pans lined with wax paper. Bake 350º for 35 to 40 minutes. Ice the cake when cool.
